- 1 medium tomato
- 1 cup extra cheddar cheese

- 1/2 cup jalapeño slices (optional)
- 1 tablespoon olive oil
Instructions
- Start by melting the butter in a skillet over medium heat.
- Add the ground beef and cook until browned. Drain excess fat if needed.
- Stir in taco seasoning until fully incorporated.
- In another pan, combine cream cheese, heavy whipping cream, and shredded cheddar cheese over low heat to create a creamy cheese sauce.
- Spread a low-carb tortilla in the skillet to warm it slightly, then layer it with the spicy beef mixture.
- Pour the cheese sauce over the beef, followed by sour cream, lettuce, tomato, cilantro, and jalapeño slices if desired.
- Top with another low-carb tortilla and crisp the edges in the skillet until golden brown.
- Remove from heat and slice for serving.
