Ingredients
- 1 cup plain yogurt (240 ml)
- 8-10 green chilies
- 1/2 cup chickpea flour (60 g)
- 1 teaspoon cumin seeds (2 g)
- 1/2 teaspoon turmeric powder (1 g)
- 1/2 teaspoon chili powder (1 g)
- Salt to taste
- 2 tablespoons vegetable oil (30 ml)
- 1 teaspoon mustard seeds (2 g)
- A pinch of asafoetida
- Curry leaves (optional)
Instructions
- Wash and pat dry the green chilies.
- Make a slit in each chili without cutting through completely.
- In a bowl, mix yogurt, chickpea flour, cumin seeds, turmeric powder, red chili powder, and salt.
- Whisk the mixture until smooth and set aside.
- Heat oil in a pan over medium heat.
- Add mustard seeds and let them splutter.
- Add asafoetida and curry leaves, if using, to the pan.
- Add the slit green chilies to the pan.
- Sauté the chilies for 3-4 minutes until they soften slightly.
- Pour the yogurt mixture over the chilies in the pan.
- Stir well to coat the chilies with the yogurt mixture.
- Cook on low heat, stirring occasionally, until the mixture thickens and the oil separates.
- Adjust salt to taste and mix well.
- Remove from heat and let it cool slightly before serving.
Notes
- For a milder flavor, deseed the green chilies before cooking.
- Use full-fat yogurt for a richer, creamier consistency.
- Finish with a splash of lemon juice for a burst of freshness.
