Ingredients
- 1 cup softened butter
- 1/2 cup granulated sugar
- 1/2 cup powdered sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chopped pecans
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream the softened butter with both sugars and oil until fluffy.
- Add the egg and vanilla, mixing until combined.
- In another bowl, whisk together the flour, baking powder, salt, and spices.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Using a cookie scooper, form uniform cookie balls and flatten slightly.
- Press down in the center to create a space for the pecan filling.
- Bake for 8-9 minutes or until golden edges appear.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to wire racks.
