Description

Ingredients

  • 1 cup softened butter
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg


Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream the softened butter with both sugars and oil until fluffy.
  3. Add the egg and vanilla, mixing until combined.
  4. In another bowl, whisk together the flour, baking powder, salt, and spices.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Using a cookie scooper, form uniform cookie balls and flatten slightly.
  7. Press down in the center to create a space for the pecan filling.
  8. Bake for 8-9 minutes or until golden edges appear.
