Description

A hearty and easy-to-make taco casserole that simmers in the crockpot, bringing everyone together with its comforting flavors.


Ingredients

  • 1 lb ground beef
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheese
  • Tortilla chips
  • Sour cream and green onions for topping (optional)


Instructions

  1. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  2. In a crockpot, layer the ground beef, black beans, corn, diced tomatoes, and taco seasoning. Stir to combine.
  3. Cook on low for 4-6 hours.
  4. About 30 minutes before serving, sprinkle shredded cheese on top and cover to melt.
  5. Serve with tortilla chips and top with sour cream and green onions if desired.

Notes

For lighter options, substitute ground beef with turkey or lentils. Adjust the taco seasoning based on your spice preference.
