Ingredients
- 454 g ground beef
- 1/2 onion (diced)
- 1 red bell pepper (diced)
- 1 can petite diced tomatoes (411 g)
- 1 can crushed tomatoes (794 g)
- 1 teaspoon (5 ml) minced garlic
- 1 tablespoon (15 ml) Italian Seasoning
- 946 ml beef broth
- 340 g lasagna noodles
- 1/2 cup (120 ml) ricotta cheese
- 1 cup (240 ml) mozzarella cheese (shredded)
- 1 cup (240 ml) parmesan cheese (shredded)
Instructions
- Begin by cooking the ground beef in a large pan over medium-high heat until browned, then remove any excess fat.
- Transfer the browned beef to a 6-quart slow cooker.
- Add the diced onion and red bell pepper to the slow cooker. Pour in the crushed and petite diced tomatoes.
- Incorporate the seasonings.
- Add the beef broth to the mixture.
- Place the lid on the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
- After cooking, remove the lid. Break the lasagna noodles into small pieces and mix them into the soup. Break them directly over the slow cooker so the small pieces fall in.
- Cover and continue cooking on high for 30-45 minutes until the noodles are tender.
- Ladle the soup into bowls. Garnish with a spoonful of ricotta cheese, and sprinkle with mozzarella and parmesan cheese.
