Ingredients
- 1 lb (454 g) chicken breasts
- 5 medium sized potatoes (about 1 kg)
- 2 tbsp (30 ml) olive oil
- salt, pepper, garlic powder, paprika (for potatoes)
- 1/2 tsp (2.5 ml) each of salt and pepper
- 1 tsp (5 ml) each of paprika, onion powder, and Italian seasoning
- 2 tbsp (30 ml) minced garlic
- Garlic Parmesan sauce (use a non-alcoholic alternative) just enough to cover chicken
- 1 cup (125 g) of shredded mozzarella cheese
Instructions
- Rinse the potatoes and chop them into small cubes.
- Coat the inside of a slow cooker with a non-stick spray.
- Place the potato cubes into the slow cooker. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and paprika according to your taste.
- Mix in the minced garlic, ensuring the potatoes are well-coated with the seasonings.
- Dice the chicken breasts into cubes.
- Season the chicken pieces with half a teaspoon each of salt and pepper, and a teaspoon each of paprika, onion powder, and Italian seasoning.
- Pour enough garlic Parmesan sauce over the chicken to cover it. You can add more sauce later if desired.
- Set the slow cooker to low heat and cook for around six hours, or until the potatoes reach your preferred tenderness.
- Mix everything thoroughly.
- Sprinkle shredded mozzarella cheese on top and let it sit until the cheese melts.
- Dish up and enjoy! We added a bit of ranch dressing on top, and it tasted amazing!
