Ingredients

  • 1 lb (454 g) chicken breasts
  • 5 medium sized potatoes (about 1 kg)
  • 2 tbsp (30 ml) olive oil
  • salt, pepper, garlic powder, paprika (for potatoes)
  • 1/2 tsp (2.5 ml) each of salt and pepper
  • 1 tsp (5 ml) each of paprika, onion powder, and Italian seasoning
  • 2 tbsp (30 ml) minced garlic
  • Garlic Parmesan sauce (use a non-alcoholic alternative) just enough to cover chicken
  • 1 cup (125 g) of shredded mozzarella cheese


Instructions

  1. Rinse the potatoes and chop them into small cubes.
  2. Coat the inside of a slow cooker with a non-stick spray.
  3. Place the potato cubes into the slow cooker. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and paprika according to your taste.
  4. Mix in the minced garlic, ensuring the potatoes are well-coated with the seasonings.
  5. Dice the chicken breasts into cubes.
  6. Season the chicken pieces with half a teaspoon each of salt and pepper, and a teaspoon each of paprika, onion powder, and Italian seasoning.
  7. Pour enough garlic Parmesan sauce over the chicken to cover it. You can add more sauce later if desired.
  8. Set the slow cooker to low heat and cook for around six hours, or until the potatoes reach your preferred tenderness.
  9. Mix everything thoroughly.
  10. Sprinkle shredded mozzarella cheese on top and let it sit until the cheese melts.
  11. Dish up and enjoy! We added a bit of ranch dressing on top, and it tasted amazing!

  • Marinate the chicken in the garlic Parmesan sauce for at least 30 minutes before cooking for enhanced flavor.
