Description

Discover how to make delicious Crockpot Cream Cheese Chicken Chili with this easy recipe. Creamy, flavorful, and perfect for cozy nights in!

Ingredients

  • 1 can (240g) black beans, rinsed and drained
  • 1 can (240g) white beans
  • 1 can (240g) corn, undrained
  • 1 can (240g) diced tomatoes with green chilies, undrained
  • 1 package ranch dressing mix
  • 1 tsp (5g) ground cumin
  • 1 tbsp (15g) chili powder
  • 1 tsp (5g) onion powder
  • 1 8oz (225g) package light cream cheese
  • 2 chicken breasts

Instructions

  1. Position the chicken breasts at the base of the crockpot.
  2. Pour the entire cans of corn, diced tomatoes with green chilies, black beans, and white beans over the chicken.
  3. Sprinkle the seasonings and ranch dressing mix over the top and combine everything.
  4. Lay the cream cheese over the mixture.
  5. Secure the lid and let it cook on a low setting for 6-8 hours.
  6. Blend the cream cheese into the chili.
  7. Use two forks to pull apart the chicken into shreds.
  8. Mix everything thoroughly and serve.

Notes

  • Consider using full-fat cream cheese for a creamier texture. Try using diced tomatoes with extra spicy green chilies for added heat. Swap ground cumin for smoked paprika for a smokier flavor.
