- 1 package ranch dressing mix
- 1 tsp (5g) ground cumin
- 1 tbsp (15g) chili powder
- 1 tsp (5g) onion powder
- 1 8oz (225g) package light cream cheese
- 2 chicken breasts
Instructions
- Position the chicken breasts at the base of the crockpot.
- Pour the entire cans of corn, diced tomatoes with green chilies, black beans, and white beans over the chicken.
- Sprinkle the seasonings and ranch dressing mix over the top and combine everything.
- Lay the cream cheese over the mixture.
- Secure the lid and let it cook on a low setting for 6-8 hours.
- Blend the cream cheese into the chili.
- Use two forks to pull apart the chicken into shreds.

Notes
- Consider using full-fat cream cheese for a creamier texture. Try using diced tomatoes with extra spicy green chilies for added heat. Swap ground cumin for smoked paprika for a smokier flavor.
