Description

An easy, 3-ingredient recipe that transforms chicken into flavorful taco meat, perfect for weeknight dinners.

Ingredients

  • 3 lbs boneless, skinless chicken breast
  • 4 Tbsp homemade taco seasoning
  • 1 cup low-sodium chicken broth (or water)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Top the chicken with taco seasoning, ensuring even coating.
  3. Pour the chicken broth over the mixture.
  4. Close the lid and cook on high for 3-4 hours or low for 6-8 hours.
  5. Once cooked, remove the chicken breast and place it in a large bowl.
  6. Shred the chicken using two forks or a stand-mixer.
  7. Stir the reserved crockpot juices and mix in 1/2 cup into the shredded chicken.

Notes

For added moisture, mix leftover crockpot juices into the shredded chicken. Customize your tacos with various toppings like cilantro, avocado, and sour cream.
