Description

A hearty and comforting crock pot taco soup that seamlessly combines ground beef, beans, and spices for a soul-satisfying meal.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (4 ounces) diced green chilies
  • 1 packet taco seasoning mix
  • 1 cup water
  • Salt and pepper to taste


Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked. Drain the excess fat.
  2. Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes.
  3. Transfer the beef and onion mixture into the crock pot.
  4. Add in the black beans, kidney beans, corn, tomato sauce, diced tomatoes, and green chilies.
  5. Sprinkle the taco seasoning mix and pour in one cup of water. Stir the mixture until well combined.
  6. Cover the crock pot with its lid and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  7. About 15 minutes before serving, taste the soup and adjust seasoning with salt and pepper as desired.
  8. Serve the taco soup in bowls, adding optional garnishes if desired.

Notes

Customize with toppings like shredded cheese, sour cream, cilantro, jalapeños, or tortilla chips for added flavor and texture.
