A hearty and comforting crock pot taco soup that seamlessly combines ground beef, beans, and spices for a soul-satisfying meal.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (15 ounces) tomato sauce
- 1 can (14.5 ounces) diced tomatoes
- 1 can (4 ounces) diced green chilies
- 1 packet taco seasoning mix
- 1 cup water
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat until fully cooked. Drain the excess fat.
- Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes.
- Transfer the beef and onion mixture into the crock pot.
- Add in the black beans, kidney beans, corn, tomato sauce, diced tomatoes, and green chilies.
- Sprinkle the taco seasoning mix and pour in one cup of water. Stir the mixture until well combined.
- Cover the crock pot with its lid and set it to cook on low for 6-8 hours or on high for 3-4 hours.
- About 15 minutes before serving, taste the soup and adjust seasoning with salt and pepper as desired.
- Serve the taco soup in bowls, adding optional garnishes if desired.

Customize with toppings like shredded cheese, sour cream, cilantro, jalapeños, or tortilla chips for added flavor and texture.
