Ingredients
- – 4 boneless, skinless chicken breasts (about 680g)
- – 1/2 teaspoon (3 ml) salt
- – 1/2 teaspoon (3 ml) garlic powder
- – 1/2 teaspoon (3 ml) onion powder
- – 1/4 teaspoon (1 ml) black pepper
- – 2 tablespoons (30 ml) olive oil
- – 2 tablespoons (30 ml) vegetable oil
- – 1 1/2 cups chicken broth (360ml)
- – 3 tablespoons (45 ml) cornstarch
- – 1 cup (240 ml) coconut cream
- – 4 cloves garlic, minced
- – 1 1/2 teaspoons (8 ml) Italian seasoning
- – 1/2 teaspoon (3 ml) salt
- – 1/2 teaspoon (3 ml) black pepper
- – 1/2 teaspoon (3 ml) red pepper flakes
- – 1/2 teaspoon (3 ml) paprika
- – 8/3 cup chopped sun-dried tomatoes, drained (about 160ml)
- – 1/2 cup (120 ml) freshly grated parmesan cheese
- – 6-8 fresh basil leaves, chopped
Instructions
- In a small bowl, combine the salt, garlic powder, onion powder, and black pepper. Use this mixture to coat both sides of the chicken breasts.
- Place a large skillet over medium-high heat and add the olive oil and vegetable oil. Allow the oil to heat up.
- Brown the chicken breasts on both sides until they are golden. Remove the skillet from the heat and set aside. The chicken should be browned but not fully cooked. Turn off the heat, keeping the remaining oil in the skillet for later use.
- In a separate bowl, blend the chicken broth and cornstarch until smooth and free of lumps.
- Pour this broth mixture into the base of a 6-quart slow cooker.
- Stir in the coconut cream, minced garlic, Italian seasoning, salt, black pepper, red pepper flakes, and paprika.
- Place the browned chicken breasts into the slow cooker, then drizzle with the reserved oil from the skillet.
- Sprinkle the chopped sun-dried tomatoes over the chicken. Set the slow cooker to low and cook for 6-8 hours. Avoid lifting the lid during cooking to ensure the chicken remains tender.
- Remove the chicken breasts and mix in the parmesan cheese until well incorporated. Return the chicken to the slow cooker, coat with the sauce, top with chopped fresh basil leaves, and serve.
Notes
- For a more flavorful dish, use homemade chicken broth instead of store-bought.
- Adjust the amount of red pepper flakes to your desired level of spiciness.
- Swap coconut cream with heavy cream for a smoother sauce.
