Description

Tender meatballs cooked in a rich, savory onion and beef broth sauce, reminiscent of French onion soup.


Ingredients

  • 1 lb lean ground beef
  • 1/2 cup plain breadcrumbs
  • 3 cloves garlic, minced
  • 2 large sweet yellow onions, thinly sliced
  • 2 large eggs
  • 1 cup low-sodium beef broth
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste


Instructions

  1. Combine the ground beef, breadcrumbs, minced garlic, eggs, salt, and pepper in a large bowl. Mix until well combined.
  2. Roll the mixture into one-inch meatballs and place them on a parchment-lined baking sheet.
  3. Caramelize sliced onions in a skillet over medium heat for about 15–20 minutes until golden brown.
  4. Mix the caramelized onions with beef broth, soy sauce, dried thyme, and remaining onion bits in the slow cooker.
  5. Add the meatballs to the slow cooker, ensuring they are submerged in the sauce.
  6. Cover and cook on low for 6 hours or high for 3 hours.

Notes

For a thicker sauce, mix a bit of cornstarch with water and add it right before finishing the cooking process.
