Ingredients
- 1 can black beans, rinsed and drained (240g)
- 1 can white beans (240g)
- 1 can corn, undrained (340g)
- 1 can diced tomatoes with green chilies, undrained (280g)
- 1 package ranch dressing mix
- 1 tsp (5 ml) ground cumin
- 1 tbsp (15 ml) chili powder
- 1 tsp (5 ml) onion powder
- 1 8 oz package light cream cheese (226g)
- 2 chicken breasts
Instructions
- Set the chicken breasts at the base of the slow cooker, then add the entire can of corn, diced tomatoes with green chilies, black beans, and white beans over them.
- Sprinkle the seasonings and ranch dressing mix evenly on top. Mix everything gently.
- Put the cream cheese on top of the mixture.
- Cover the slow cooker with the lid and let it cook on a low setting for 6 to 8 hours.
- Once cooked, blend the cream cheese into the chili.
- Using two forks, pull apart the chicken into shreds.
- Combine everything well and enjoy your meal.
