Ingredients

  • 1 can black beans, rinsed and drained (240g)
  • 1 can white beans (240g)
  • 1 can corn, undrained (340g)
  • 1 can diced tomatoes with green chilies, undrained (280g)
  • 1 package ranch dressing mix
  • 1 tsp (5 ml) ground cumin
  • 1 tbsp (15 ml) chili powder
  • 1 tsp (5 ml) onion powder
  • 1 8 oz package light cream cheese (226g)
  • 2 chicken breasts


Instructions

  1. Set the chicken breasts at the base of the slow cooker, then add the entire can of corn, diced tomatoes with green chilies, black beans, and white beans over them.
  2. Sprinkle the seasonings and ranch dressing mix evenly on top. Mix everything gently.
  3. Put the cream cheese on top of the mixture.
  4. Cover the slow cooker with the lid and let it cook on a low setting for 6 to 8 hours.
  5. Once cooked, blend the cream cheese into the chili.
  6. Using two forks, pull apart the chicken into shreds.
  7. Combine everything well and enjoy your meal.
