Description
Transform ordinary carrots into a star side dish with crispy edges and a soft center, enhanced with Parmesan cheese and herbs.
Ingredients
- 1 pound fresh carrots
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
- Parmesan cheese, for garnish
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel and cut the carrots into thick rounds.
- Boil the carrot rounds in salted water for 10-12 minutes until fork-tender.
- Drain the carrots and let them cool slightly.
- Place the carrots on the baking sheet and use a glass to gently smash each round.
- Drizzle the smashed carrots with olive oil and season with garlic powder, smoked paprika, salt, and pepper.
- Roast the carrots for about 20-25 minutes, turning halfway through, until they are golden and crispy.
- Garnish with Parmesan cheese and fresh parsley before serving.

For added flavor, consider experimenting with cheeses and fresh herbs. Ensure not to overcrowd the baking sheet to maintain crispiness.
