Description

Transform ordinary carrots into a star side dish with crispy edges and a soft center, enhanced with Parmesan cheese and herbs.


Ingredients

  • 1 pound fresh carrots
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • Parmesan cheese, for garnish
  • Fresh parsley, for garnish


Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel and cut the carrots into thick rounds.
  3. Boil the carrot rounds in salted water for 10-12 minutes until fork-tender.
  4. Drain the carrots and let them cool slightly.
  5. Place the carrots on the baking sheet and use a glass to gently smash each round.
  6. Drizzle the smashed carrots with olive oil and season with garlic powder, smoked paprika, salt, and pepper.
  7. Roast the carrots for about 20-25 minutes, turning halfway through, until they are golden and crispy.
  8. Garnish with Parmesan cheese and fresh parsley before serving.
