Description

Delicious crispy corn cheese bites featuring a blend of sweet corn, rich cheeses, and spices, perfect as an appetizer or a snack.


Ingredients

  • 1 ½ cups canned or frozen sweet corn, well-drained
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup all-purpose flour
  • 1 large egg
  • ¼ cup breadcrumbs
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • Vegetable or canola oil, for frying


Instructions

  1. Prepare the corn: Drain canned corn or thaw and pat dry frozen corn.
  2. In a large bowl, whisk the egg lightly.
  3. Add flour, cheddar, mozzarella, breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper to the bowl with the egg.
  4. Incorporate the prepared corn and mix until well combined.
  5. Shape the mixture into small balls or discs.
  6. For frying, heat oil to 350-375°F and fry the bites until golden brown. For baking, preheat oven to 400°F, line with parchment, and bake until crispy, flipping halfway.

Notes

Mix thoroughly and adjust spices to taste. For added crunch, double-coat with breadcrumbs.
