Description

Crispy coconut rice combines creamy jasmine rice and crispy texture, making it a versatile dish for any meal.


Ingredients

  • 2 cups jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • 3 green onions, chopped (for garnish)
  • Salt to taste
  • Vegetable oil for frying


Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain.
  2. In a pot, combine the rice, coconut milk, water, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15–20 minutes until rice is cooked.
  3. Allow the rice to cool and firm up, preferably in the refrigerator.
  4. Once cooled, heat vegetable oil in a skillet over medium heat.
  5. Spoon the rice into the skillet and flatten it with a spatula.
  6. Cook until the bottom is golden and crispy, about 5–7 minutes.
  7. Carefully flip the rice and cook the other side until golden brown.
  8. Once cooked, sprinkle with chopped scallions and serve as a main or side dish.

For added flavor, consider incorporating spices or herbs into the rice while cooking or experimenting with different toppings after frying.
