- 25 cup (60 ml) finely chopped green onion, or to taste
- 1 jalapeno pepper, finely chopped
- Salt and ground black pepper to taste
- 8 chicken tenders
- 8 slices beef bacon
- 8 toothpicks
- 6 tablespoon (90 ml) s pepper jelly
Instructions
- Heat your oven to 400°F (200°C) and place a wire rack over a baking tray.
- Combine softened cream cheese, chopped green onion, diced jalapeno, salt, and pepper in a bowl.
- Flatten the chicken tenders into rectangles using the smooth side of a meat mallet. Spoon 3 tablespoons of the cheese mixture onto the center of each piece, then fold them into small parcels.
- Encase each parcel with a strip of beef bacon, securing it with a toothpick. Add a dollop of pepper jelly on top. Position them on the wire rack.
- Cook in the preheated oven until the bacon is crispy and the chicken is fully cooked, approximately 35 minutes.
Notes
- Ensure cream cheese is fully softened for easy mixing with green onion and jalapeno.
- Adjust jalapeno quantity to suit your spice level preference.
- Wrap chicken parcels tightly with beef bacon to prevent filling leakage while baking.
