Ingredients

  • 9 slices beef bacon
  • 2 boneless, skinless chicken breasts (about 1.3 lb (590 g))
  • 3/4 tsp (4 ml) salt
  • 1/2 tsp (3 ml) freshly cracked black pepper
  • 1/2 tsp (3 ml) garlic powder
  • 2 Tbsp (30 ml) olive oil
  • 12 slices white sandwich bread
  • 2 large tomatoes
  • 8 leaves iceberg or romaine lettuce
  • 8 slices colb y-jack cheese
  • 1/2 cup (120 ml) mayonnaise


Instructions

  1. Begin by preparing the bacon. Set your oven to 400°F. Cover a baking tray with aluminum foil and place a wire rack over it to elevate the bacon.
  2. Lay the bacon strips along the wire rack and place them in the oven for about 25 minutes or until they reach your preferred level of crispiness. Once done, transfer the bacon using tongs to a plate lined with paper towels.
  3. As the bacon is baking, start on the chicken. Carefully slice each chicken breast into two thinner pieces using a sharp knife. To even out their thickness, cover them with plastic wrap and gently pound with a rolling pin or meat mallet. Season the chicken pieces with salt, pepper, and garlic powder.
  4. Warm up a large pan over medium heat and pour in the olive oil. Once the pan is ready, add the chicken and cook each side until they are golden and fully cooked, approximately 4 minutes per side. Move the chicken to a clean plate and cover to keep it warm.
  5. While the chicken rests, get the other ingredients ready. Toast the bread slices, cut the tomatoes into slices, wash and dry the lettuce leaves, and gather the cheese slices along with the cooked bacon. Slice the chicken breasts into strips.
  6. It’s time to build the sandwiches. Spread a thin coat of mayonnaise on one side of two bread slices. Add layers of lettuce, tomato slices, chicken strips, a slice of cheese, and bacon. Place another slice of bread with mayo on top and repeat the layering. Finish with another slice of toasted bread.
  7. Slice each sandwich in half and serve them with your choice of side dishes. I personally recommend chips and a dill pickle spear. Enjoy your meal!
