Description

A simple yet flavorful dish featuring zucchini coated in olive oil and parmesan, baked to crispy perfection.


Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 2 tbsp olive oil
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • Chopped parsley or lemon zest for garnish


Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment.
  2. Slice the zucchini into even rounds.
  3. Toss the slices with olive oil, parmesan, salt, black pepper, and garlic powder.
  4. Arrange the zucchini in a single layer on the baking sheet.
  5. Bake for 18–20 minutes until golden and slightly crisp on the edges.
  6. Serve warm with extra parmesan if you like.

Notes

For extra crispiness, consider broiling the zucchini for the last minute of baking. Keep an eye on them to prevent overcooking.
