A simple and versatile crepe batter recipe that can be used for both sweet and savory fillings.
Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup whole milk
- 1/2 cup sparkling water
- 2 tbsp melted butter (plus extra for cooking)
- 1/4 tsp salt
- 1 tsp vanilla extract (optional, for sweet crepes)
- 1 tbsp sugar (optional, for sweet crepes)
Instructions
- In a blender or mixing bowl, combine the eggs, milk, sparkling water, melted butter, and salt. If making sweet crepes, add the vanilla extract and sugar.
- Blend or whisk until smooth, gradually adding the flour and ensuring there are no lumps.
- Let the batter rest for 30 minutes (optional) to improve texture.
- Heat a non-stick pan over medium heat and lightly coat with butter.
- Pour about 1/4 cup of batter into the pan, swirling it to create a thin layer.
- Cook for 1-2 minutes until the edges lift and the bottom is lightly browned. Flip and cook the other side for an additional 30 seconds.
- Repeat with the remaining batter, adding more butter as needed.
- Serve warm with your choice of fillings.
Notes
Letting the batter sit enhances its texture. Preheat the pan adequately for even cooking.
