Ingredients
- 1 tbsp Olive Oil (15 ml)
- 1 Yellow Onion, finely diced
- 3 cloves Garlic, finely minced
- 3 cans Green Chilis
- 2 lbs (907 g) Chicken Breast, raw, diced into 1/2 inch cubes
- 5 tsp Adobo Seasoning (7.5 g), only needed if you are cooking your chicken
- 2 Limes
- 4 cans White Beans (15.5 oz/439 g), cannellini or great northern beans
- 1 cup (240 ml) Frozen Corn Kernels, White
- 5 cups Chicken Broth (828 ml)
- 5 tsp (8 ml) Sea Salt
- 1 tsp (5 ml) Black Pepper
- 3 tsp (15 ml) Cumin
- 1 tsp (5 ml) Oregano
- 1/4 tsp (1 ml) Pepper Flakes, I used Hatch Chili Pepper Flakes
- 8 oz Beef Cream Cheese, cut into cubes (227 g)
- 1 cup Coconut Cream (240 ml)
- Blue Corn Tortilla Chips, optional but recommended
- Avocado, optional but recommended
Instructions
- Pour the olive oil into a large pot or Dutch oven and warm it up over medium heat.
- Sauté the onions and garlic for approximately 5 minutes, then introduce the chopped green chiles.
- When the onions and garlic begin to caramelize, incorporate the diced chicken seasoned with Adobo and the juice of one lime. Stir continuously for five minutes.
- Ensure each piece of chicken is lightly browned on all sides, then introduce the chicken broth, beans, corn, salt, pepper, cumin, oregano, and pepper flakes. Allow it to come to a boil.
- Maintain a boil for about 3 minutes, then reduce the heat to a low simmer. Aim for occasional bubbling during the cooking process.
- Let it simmer for 45 minutes before turning off the heat. Mix in the cream cheese thoroughly, then add the coconut cream and blend well.
- Serve in a bowl, drizzle with a bit of lime juice, and top with avocado slices and crushed tortilla chips. Enjoy!
