Ingredients

  • 5 lbs (680g) ground beef or leftover Thanksgiving beef
  • 2 carrots, chopped
  • 2 stalks celery
  • 1 small onion, diced
  • 2 tablespoons (30 ml) vegetable oil
  • 15 oz (425g) pumpkin puree
  • 5 oz (411g) diced tomatoes
  • 2 cups (480ml) chicken broth
  • 15 oz (425g) navy beans, drained and rinsed
  • 15 oz (425g) cannellini beans, drained and rinsed
  • 1 cup (240ml) fresh spinach leaves, chopped
  • 1 tablespoon (15 ml) fresh thyme
  • 2 tablespoons (30 ml) chili powder
  • 2 tablespoons (30 ml) sugar or honey
  • 2 tablespoons (30 ml) plain yogurt
  • salt and pepper to taste


Instructions

  1. Warm up a large pot over medium-high heat and add vegetable oil. Toss in chopped carrots and sauté for 3 minutes, stirring often. Add the chopped celery and continue to cook, stirring, for another 3 minutes. Then, include the diced onion and cook until they become see-through, about 3 more minutes.
  2. Brown the beef. Add the ground beef to the pot and mix with the vegetables until it is thoroughly cooked, approximately 8-10 minutes. If you’re using leftover beef, cook just the vegetables for an additional 5 minutes and incorporate the cooked beef with the rest of the ingredients in the following step.
  3. Combine the mixture. Pour in the pumpkin puree, diced tomatoes, drained beans, chicken broth, chopped spinach, thyme, chili powder, and sugar or honey. Bring everything to a boil. Stir in plain yogurt and take the pot off the heat.
  4. Adjust the seasoning with salt and pepper to your liking.
  5. Dish out the chili into bowls and enjoy!
