Ingredients

  • 4 large sweet potatoes (about 1.1 kg), cut in half lengthwise
  • vegetable oil
  • 2 tablespoons (30 ml) vegetable oil
  • 1 cup (240 ml) finely diced yellow onion (about 1 medium onion)
  • 1/2 cup (120 ml) finely diced celery (about 2 celery stalks)
  • 3 garlic cloves
  • 1 teaspoon (5 ml) dried oregano
  • 3/4 teaspoon (4 ml) ground ginger
  • 1/2 teaspoon (3 ml) ground cumin
  • 1/2 teaspoon (3 ml) salt
  • 1/2 teaspoon (3 ml) ground black pepper
  • 3 cups (720 ml) vegetable stock
  • 14 ounces (400 ml) canned coconut milk
  • Additional salt and black pepper to taste


Instructions

  1. Preheat your oven to 400°F. Place sweet potato halves on a parchment-lined baking tray, cut side facing down, after brushing them with oil. Bake for 30 minutes. Let them cool slightly, then remove and discard the skins. Mash the sweet potatoes in a bowl until smooth.
  2. As the sweet potatoes bake, warm a large pot over medium heat. Pour in the vegetable oil, and once heated, add the chopped onion and celery, stirring occasionally for about 5 minutes. Mince the garlic directly into the pot and add the oregano, ginger, cumin, salt, and pepper. Stir continuously for another minute.
  3. Pour in the vegetable stock and coconut milk, bringing the mixture to a gentle simmer. Keep it at a low simmer until the sweet potatoes are done.
  4. Blend the mashed sweet potatoes into the soup until well-mixed. Adjust seasoning with additional salt and pepper if needed. For a creamier texture, carefully blend the soup in a food processor or blender, ensuring the lid is vented to release steam, or use an immersion blender directly in the pot.
  5. Serve the soup hot. Optionally, garnish with chopped chives or green onions, a dollop of Greek yogurt or sour cream, or sprinkle with toasted pecans or walnuts.
