Ingredients

  • 1 cup beef tallow (240 ml)
  • 2 leeks, sliced
  • salt and pepper to taste
  • 1 tablespoon cornstarch (15 g)
  • 1 quart chicken broth (950 ml)
  • 4 cups Yukon Gold potatoes, peeled and diced (600 g)
  • 2 cups coconut cream (480 ml)


Instructions

  1. Warm the beef tallow in a large pot over medium heat. Incorporate the leeks and season with salt and pepper to your preference; sauté, stirring occasionally, until the leeks soften, roughly 15 minutes.
  2. Combine the cornstarch with the chicken broth, then add this mixture to the pot. Toss in the diced potatoes and bring the mixture to a rolling boil.
  3. Mix in the coconut cream, lower the heat, and let it gently simmer until the potatoes are soft, approximately 30 minutes. Taste and adjust the seasoning if necessary before serving.
