Ingredients
- 1 cup beef tallow (240 ml)
- 2 leeks, sliced
- salt and pepper to taste
- 1 tablespoon cornstarch (15 g)
- 1 quart chicken broth (950 ml)
- 4 cups Yukon Gold potatoes, peeled and diced (600 g)
- 2 cups coconut cream (480 ml)
Instructions
- Warm the beef tallow in a large pot over medium heat. Incorporate the leeks and season with salt and pepper to your preference; sauté, stirring occasionally, until the leeks soften, roughly 15 minutes.
- Combine the cornstarch with the chicken broth, then add this mixture to the pot. Toss in the diced potatoes and bring the mixture to a rolling boil.
- Mix in the coconut cream, lower the heat, and let it gently simmer until the potatoes are soft, approximately 30 minutes. Taste and adjust the seasoning if necessary before serving.
