Ingredients
- 1 lb Italian beef sausage
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 large carrots, diced
- 2 stalks celery, diced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, cook the Italian beef sausage over medium heat until browned.
- Add the onions, garlic, carrots, and celery. Sauté until the vegetables are tender.
- Pour in the vegetable or chicken broth and bring to a boil.
- Reduce heat and stir in the heavy cream and Parmesan cheese.
- Season with Italian seasoning, salt, and pepper.
