Ingredients
- – 2 large chicken breasts (500g)
- – Salt & pepper to taste
- – Flour for dredging
- – 2 tablespoons olive oil (30ml)
- – 2 tablespoons vegetable oil (30ml)
- – 12 ounces mushrooms (340g) (try cremini or white mushrooms) sliced
- – 1/4 teaspoon (1 ml) Italian seasoning
- – 3 cloves garlic, minced
- – 1/2 cup beef broth (120ml)
- – 1/2 teaspoon (3 ml) lemon juice
- – 1/2 teaspoon (3 ml) mustard
- – 1 cup heavy/whipping cream (240ml)
Instructions
- Slice the chicken breasts horizontally to create four thinner pieces. Sprinkle them with salt and pepper, then lightly coat with flour.
- Pour the oils into a frying pan and heat over medium-high.
- When the pan is heated, place the chicken inside. Fry each side for 4-5 minutes until they turn golden brown. After cooking, remove the chicken and set it aside.
- Introduce mushrooms and Italian seasoning to the pan, cooking until they release their moisture and develop a nice browning.
- Remove the mushrooms from the pan and set them aside with the chicken.
- Add minced garlic, beef broth, lemon juice, and mustard to the pan. Stir well until the mustard is fully mixed in, then let the mixture reduce by half, which should take about 3-4 minutes.
- Pour in the cream, returning the chicken and mushrooms to the pan. Allow the chicken to simmer for another 5 minutes or until it is done and the sauce slightly thickens. Adjust salt and pepper to your liking.
