Ingredients
- 1 tbsp olive oil (15 ml)
- 1 lb lean ground beef (450 g)
- 1/2 cup chopped yellow onion (120 g)
- 2 tbsp vegetable oil (28 g)
- 3 tbsp all-purpose flour (24 g)
- 1 tsp Worcestershire sauce (5 ml)
- 6 cups peeled and diced russet potatoes (900 g)
- 6 cups (1440 ml) chicken stock (1.5 liters)
- 2 cups 2% or whole milk (475 ml)
- 1 15 oz (425 g) can green beans, drained (or 1 1/2 cups (360 ml) fresh, trimmed green beans)
- 1/2 cup plain yogurt (120 g)
- 1 cup cheddar cheese (120 g)
- 1/4 cup chopped parsley (15 g)
- 1 1/2 tsp (8 ml) salt
- 1 tsp (5 ml) black pepper
- 1/2 tsp (3 ml) garlic powder
- 1 tsp (5 ml) Italian seasoning
- 1/4 tsp (1 ml) paprika (optional)
- 1 tsp (5 ml) dried mustard
- 1/2 tsp (3 ml) celery salt
- shredded cheddar cheese
- plain yogurt
- green onions
- green or red hot sauce
- crispy beef strips
Instructions
- Combine all the spices in a small bowl and put them aside.
- Warm a large pot on medium heat, then add the olive oil, ground beef, and onions. Cook while breaking the beef into small pieces until it’s no longer pink. Remove any excess fat.
- Introduce the vegetable oil to the beef and onions. Once it has melted, mix in the flour and cook for one minute.
- Incorporate the spice mixture, Worcestershire sauce, diced potatoes, chicken stock, milk, and green beans. Mix well and bring the mixture to a boil. Lower the heat to medium and let it gently boil for 10-12 minutes, stirring frequently. The soup is ready when the potatoes are tender and the consistency has thickened.
- Take the soup off the heat and blend in the plain yogurt, cheddar cheese, and chopped parsley. Serve with your preferred garnishes.

- For a richer consistency, opt for whole milk over 2% milk.
