Description

A nostalgic and creamy green bean potato salad, perfect for picnics and gatherings.


Ingredients

  • 1 lb Fresh green beans
  • 2 cups Potatoes
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour cream
  • 2 tbsp Mustard
  • 1/4 cup Red onion, finely chopped
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • Fresh herbs (optional)


Instructions

  1. Boil the potatoes until tender. Cool and chop into bite-sized pieces.
  2. Blanch the green beans in boiling water for a few minutes, then plunge them into ice water.
  3. Mix together the mayonnaise, sour cream, mustard, chopped red onion, salt, and pepper in a bowl.
  4. Combine the potatoes and green beans in a large mixing bowl.
  5. Pour the dressing over the vegetables and toss gently to coat.
  6. Garnish with fresh herbs if desired, and chill before serving.
