Ingredients
- 1 lb Fresh green beans
- 2 cups Potatoes
- 1/2 cup Mayonnaise
- 1/2 cup Sour cream
- 2 tbsp Mustard
- 1/4 cup Red onion, finely chopped
- 1 tsp Salt
- 1/2 tsp Pepper
- Fresh herbs (optional)
Instructions
- Boil the potatoes until tender. Cool and chop into bite-sized pieces.
- Blanch the green beans in boiling water for a few minutes, then plunge them into ice water.
- Mix together the mayonnaise, sour cream, mustard, chopped red onion, salt, and pepper in a bowl.
- Combine the potatoes and green beans in a large mixing bowl.
- Pour the dressing over the vegetables and toss gently to coat.
- Garnish with fresh herbs if desired, and chill before serving.
