Ingredients
- – 1 pound (454 g) boneless, skinless chicken breasts (cubed)
- – 3/4 teaspoon (4 ml) garlic salt
- – 1/4 teaspoon (1 ml) ground black pepper
- – 4 cloves garlic (minced)
- – 1 cup (240 ml) white grape juice
- – 3 cups (720 ml) low-sodium chicken broth
- – 1/2 cup (120 ml) coconut cream
- – 2 cups (480 ml) fresh spinach
- – 1/4 cup (60 ml) freshly grated vegan cheese
Instructions
- Sprinkle the chicken pieces with garlic salt and pepper for seasoning.
- Coat a large frying pan with oil and cook the chicken on medium-high heat for 5-7 minutes until it turns golden brown.
- Incorporate the minced garlic and sauté for an additional minute.
- Pour in the rice and chicken broth into the skillet.
- Bring the mixture to a boil, then cover and let it cook for 12-15 minutes until most of the liquid is soaked up.
- Mix in the coconut cream and spinach, stir, cover again, and continue cooking for another 5-7 minutes.
- Blend in the grated vegan cheese and serve the dish hot!
