Ingredients

  • – 1 pound (454 g) boneless, skinless chicken breasts (cubed)
  • – 3/4 teaspoon (4 ml) garlic salt
  • – 1/4 teaspoon (1 ml) ground black pepper
  • – 4 cloves garlic (minced)
  • – 1 cup (240 ml) white grape juice
  • – 3 cups (720 ml) low-sodium chicken broth
  • – 1/2 cup (120 ml) coconut cream
  • – 2 cups (480 ml) fresh spinach
  • – 1/4 cup (60 ml) freshly grated vegan cheese


Instructions

  1. Sprinkle the chicken pieces with garlic salt and pepper for seasoning.
  2. Coat a large frying pan with oil and cook the chicken on medium-high heat for 5-7 minutes until it turns golden brown.
  3. Incorporate the minced garlic and sauté for an additional minute.
  4. Pour in the rice and chicken broth into the skillet.
  5. Bring the mixture to a boil, then cover and let it cook for 12-15 minutes until most of the liquid is soaked up.
  6. Mix in the coconut cream and spinach, stir, cover again, and continue cooking for another 5-7 minutes.
  7. Blend in the grated vegan cheese and serve the dish hot!
