Ingredients
- – 1 lb (454 g) boneless skinless chicken breasts, trimmed of excess fat
- – 1 yellow onion, diced
- – 2 cloves garlic, minced
- – 24 oz (680 g) chicken broth (low sodium)
- – 2 15 oz cans (425 g) great Northern beans, drained and rinsed
- – 2 4 oz (113 g) cans diced green chiles (I do one hot, one mild)
- – 1 15 oz (425 g) can whole kernel corn, drained
- – 1 tsp (5 ml) salt
- – 1/2 tsp (3 ml) black pepper
- – 1 tsp (5 ml) cumin
- – 3/4 tsp (4 ml) oregano
- – 1/2 tsp (3 ml) chili powder
- – 1/4 tsp (1 ml) cayenne pepper
- – small handful fresh cilantro, chopped
- – 4 oz (113 g) reduced fat cream cheese, softened
- – 1/4 cup (60 ml) half and half
- – sliced jalapenos
- – sliced avocados
- – dollop of sour cream
- – minced fresh cilantro
- – tortilla strips
- – shredded Monterey jack or Mexican cheese
Instructions
- Place the chicken breasts at the base of the slow cooker, then sprinkle them with salt, black pepper, cumin, oregano, chili powder, and cayenne pepper.
- Layer the diced onion, minced garlic, great Northern beans, green chiles, corn, chicken broth, and chopped cilantro on top. Mix everything together.
- Secure the lid and let it cook on a low setting for 8 hours or on a high setting for 3-4 hours.
- Once done, transfer the chicken to a large bowl, shred it, and place it back into the slow cooker.
- Incorporate the softened cream cheese and half and half, blend well, then cover again and cook on high for about 15 minutes until the chili becomes creamy and slightly thick.
- For a smoother texture with the cream cheese, try whisking it in a separate bowl with a few ladles of the chili from the slow cooker until smooth. Then, mix it back into the slow cooker, add the half and half, and cook on high for 15 minutes.
- Mix thoroughly and serve with your choice of toppings.
