Description

A creamy and flavorful alternative to traditional Alfredo sauce made with cottage cheese, Greek yogurt, and Parmesan.


Ingredients

  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons cornstarch
  • 1 cup vegetable or chicken broth
  • 1/2 cup skim milk
  • 1/2 cup 4% cottage cheese, blended until smooth
  • 1/4 cup plain Greek yogurt
  • 2 teaspoons minced garlic
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt


Instructions

  1. Heat the olive oil in a large saucepan over medium heat, then add the minced garlic, stirring for about 1-2 minutes.
  2. Sprinkle the cornstarch over the garlic and cook for one minute while stirring constantly.
  3. Slowly pour in the broth and milk, whisking the mixture until it combines smoothly.
  4. Increase the heat to medium-high, bringing the mixture to a simmer. Continue simmering while whisking for about 2 minutes until it begins to thicken.
  5. Remove the pan from the heat and gradually whisk in the blended cottage cheese and Greek yogurt.
  6. Return the pan to medium heat and stir in the Parmesan cheese, salt, pepper, and Italian seasoning, enabling the flavors to meld.
  7. Let the sauce simmer for an additional 2 minutes, whisking consistently for a smooth finish.

Notes

For best results, use room temperature ingredients and freshly grated cheese. Adjust thickness as needed.
