A creamy and flavorful alternative to traditional Alfredo sauce made with cottage cheese, Greek yogurt, and Parmesan.
Ingredients
- 1 tablespoon extra virgin olive oil
- 2 tablespoons cornstarch
- 1 cup vegetable or chicken broth
- 1/2 cup skim milk
- 1/2 cup 4% cottage cheese, blended until smooth
- 1/4 cup plain Greek yogurt
- 2 teaspoons minced garlic
- 1/2 cup freshly grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
- Heat the olive oil in a large saucepan over medium heat, then add the minced garlic, stirring for about 1-2 minutes.
- Sprinkle the cornstarch over the garlic and cook for one minute while stirring constantly.
- Slowly pour in the broth and milk, whisking the mixture until it combines smoothly.
- Increase the heat to medium-high, bringing the mixture to a simmer. Continue simmering while whisking for about 2 minutes until it begins to thicken.
- Remove the pan from the heat and gradually whisk in the blended cottage cheese and Greek yogurt.
- Return the pan to medium heat and stir in the Parmesan cheese, salt, pepper, and Italian seasoning, enabling the flavors to meld.
- Let the sauce simmer for an additional 2 minutes, whisking consistently for a smooth finish.
Notes
For best results, use room temperature ingredients and freshly grated cheese. Adjust thickness as needed.
