Description

A rich and creamy chickpea curry made with coconut milk and a blend of spices, perfect for cozy dinners.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 can coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro, for garnish


Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger; cook for another minute until fragrant.
  4. Stir in the curry powder, cumin, and turmeric, cooking for another minute.
  5. Add the chickpeas and coconut milk. Bring to a simmer and cook for 10-15 minutes to let the flavors meld together.
  6. Season with salt to taste.
  7. Serve hot, garnished with fresh cilantro.

Notes

For extra flavor, add a squeeze of lime juice before serving.
