A rich and creamy chickpea curry made with coconut milk and a blend of spices, perfect for cozy dinners.
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 can coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon cumin
- 1/2 teaspoon turmeric
- Salt to taste
- 2 tablespoons vegetable oil
- Fresh cilantro, for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger; cook for another minute until fragrant.
- Stir in the curry powder, cumin, and turmeric, cooking for another minute.
- Add the chickpeas and coconut milk. Bring to a simmer and cook for 10-15 minutes to let the flavors meld together.
- Season with salt to taste.
- Serve hot, garnished with fresh cilantro.
Notes
For extra flavor, add a squeeze of lime juice before serving.
