Ingredients

  • – 2 Tablespoons (30 ml) vegetable oil
  • – 1 small yellow onion, diced
  • – 1 jalapeno pepper, diced
  • – 3 cloves garlic, diced
  • – 1 Tablespoon (15 g) tomato paste
  • – 1 15 oz. can (425 g) corn, drained
  • – 1 10 oz. can (285 g) diced tomatoes with green chilies, undrained
  • – 1 15 oz. can (425 g) black beans, drained and rinsed
  • – 5 cups (1.2 L) chicken broth
  • – 2 small boneless skinless chicken breasts, or 2 cups (480 ml) shredded chicken
  • – 1 pinch Cayenne Pepper
  • – 1 teaspoon (5 ml) cumin
  • – 1-2 teaspoons (8 ml) hot sauce
  • – 1 oz. (28 g) packet taco seasoning, about 3 Tablespoons
  • – 1 ½ cups (170 g) shredded cheddar cheese
  • – 1/3 cup (80 ml) cream cheese, softened
  • – Corn or Flour Tortillas, See notes


Instructions

  1. Warm up 2 tablespoons of vegetable oil in a pan over medium heat and toss in the chopped onions and jalapeno. Cook for 4 minutes, then include the diced garlic and sauté for an additional minute.
  2. Introduce all other ingredients, except the shredded cheddar, softened cream cheese, and any toppings. It’s a good idea to start with 2 tablespoons of taco seasoning and adjust to your preference later. (I usually end up using the full amount.)
  3. Allow the soup to slowly reach a gentle simmer, keeping it partially covered. Rapid boiling will make the chicken tough, so a slow cook keeps it tender.
  4. Take the chicken out after 20-25 minutes, once it’s fully cooked. (The timing will vary based on the chicken’s thickness.) Shred it using two forks, then put it back into the soup.
  5. Lower the heat and slowly incorporate the shredded cheddar and softened cream cheese, stirring until the mixture is smooth and creamy.
  6. Sample the soup and adjust the seasonings as necessary. Add garnishes and enjoy!

Notes

  • For a spicier flavor, adjust the amount of hot sauce or cayenne pepper to your liking.
  • Enhance the soup’s taste by not omitting the taco seasoning.
  • For a vegetarian option, replace chicken broth with vegetable broth and exclude the chicken for a hearty meatless dish. Serve with warm corn or flour tortillas on the side.
