Description

A warm and comforting creamy soup made with cauliflower and sharp cheddar cheese, perfect for chilly evenings.


Ingredients

  • 1 medium head of cauliflower (about 1-1.5 pounds)
  • 2 cups shredded sharp cheddar cheese
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup whole milk or heavy cream
  • Salt and pepper to taste


Instructions

  1. Prepare the cauliflower by washing and cutting it into small florets.
  2. In a large pot, sauté the chopped onions in olive oil until soft, then add minced garlic.
  3. Add cauliflower florets and vegetable broth; bring to a simmer and cook until fork-tender, about 20 minutes.
  4. Blend the mixture until smooth.
  5. Return to heat and stir in milk or cream and cheddar cheese until melted.
