Description
A warm and comforting creamy soup made with cauliflower and sharp cheddar cheese, perfect for chilly evenings.
Ingredients
- 1 medium head of cauliflower (about 1-1.5 pounds)
- 2 cups shredded sharp cheddar cheese
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 cup whole milk or heavy cream
- Salt and pepper to taste
Instructions
- Prepare the cauliflower by washing and cutting it into small florets.
- In a large pot, sauté the chopped onions in olive oil until soft, then add minced garlic.
- Add cauliflower florets and vegetable broth; bring to a simmer and cook until fork-tender, about 20 minutes.
- Blend the mixture until smooth.
- Return to heat and stir in milk or cream and cheddar cheese until melted.
- Season with salt and pepper before serving.
