Ingredients

  • 8 oz (227 g) linguine pasta
  • 2 boneless skinless chicken breasts
  • 2 tsp (10 ml) olive oil
  • 2 tbsp (28 g) vegetable oil
  • 1 1/2 to 2 tbsp (23-30 g) cajun seasoning, divided, (or added to taste depending on the brand you use*)
  • 3 garlic cloves, minced
  • 2/3 cup (160 ml) diced tomatoes
  • 1 1/2 cup (355 ml) coconut cream
  • 1/2 cup (50 g) grated vegan parmesan cheese
  • 2 tbsp (8 g) parsley, finely chopped, to serve


Instructions

  1. Fill a large pot with water, bring it to a boil, and add a tablespoon of salt. Cook the linguine following the package directions until it is firm to the bite. Save half a cup of the cooking water, then drain the pasta, cover it, and set it aside to stay warm.
  2. Pound the chicken breasts to an even thickness and coat them entirely with 1½ tablespoons of cajun seasoning.
  3. Warm 2 teaspoons of olive oil in a large skillet over medium-high heat. Once the oil is hot, place the chicken in the skillet and brown on both sides. Lower the heat and continue cooking until the chicken is fully cooked and reaches an internal temperature of 165˚F. Move the chicken to a cutting board, slice it into thin pieces, and cover to keep warm.
  4. In the same skillet, sauté the garlic in vegetable oil over medium heat for 30 to 60 seconds until fragrant. Add the diced tomatoes and cook for an additional 2 minutes.
  5. Pour in the coconut cream, sprinkle with the remaining cajun seasoning to your liking, and stir in the vegan parmesan cheese. Bring the mixture to a gentle simmer, adjusting the seasoning if necessary.
  6. Combine the sliced chicken and cooked linguine with the sauce, tossing until everything is well mixed and heated through. If you prefer a thinner sauce, gradually add the reserved pasta water. Garnish with chopped parsley before serving.
