Description

A cozy dish combining creamy butternut squash pasta with savory sausage and fresh spinach, perfect for any occasion.


Ingredients

  • 8 oz pasta (your choice)
  • 1 medium butternut squash, peeled and diced
  • 1 lb Italian sausage
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Parmesan cheese, for serving


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned. Remove sausage from the pan and set aside.
  3. In the same skillet, add garlic and diced butternut squash. Sauté until the squash is soft, about 10-15 minutes.
  4. Stir in the heavy cream and spinach. Cook until the spinach is wilted.
  5. Add the cooked sausage and pasta to the skillet. Toss to combine. Season with salt and pepper to taste.
  6. Serve hot, topped with Parmesan cheese.
