A cozy dish combining creamy butternut squash pasta with savory sausage and fresh spinach, perfect for any occasion.
Ingredients
- 8 oz pasta (your choice)
- 1 medium butternut squash, peeled and diced
- 1 lb Italian sausage
- 2 cups fresh spinach
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Parmesan cheese, for serving
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned. Remove sausage from the pan and set aside.
- In the same skillet, add garlic and diced butternut squash. Sauté until the squash is soft, about 10-15 minutes.
- Stir in the heavy cream and spinach. Cook until the spinach is wilted.
- Add the cooked sausage and pasta to the skillet. Toss to combine. Season with salt and pepper to taste.
- Serve hot, topped with Parmesan cheese.
