Ingredients

  • 500 g (1 lb) boneless chicken thighs chopped into bite size pieces
  • 2 tbsp (30 ml) butter
  • 3 garlic cloves crushed/minced
  • 1 cup (240 ml) heavy/whipping cream
  • 1 tsp (5 ml) dried thyme
  • 2-3 cup (600 ml) s broccoli sliced into small florets
  • 3/4 cup (180 ml) Parmesan cheese grated
  • 1 tsp (5 ml) lemon juice
  • Salt and pepper to taste
  • 500 g (1 lb) pasta cooked + 1 cup cooking water reserved


Instructions

  1. Fill a large pot with water, add salt, and bring it to a boil.
  2. Once boiling, add the pasta and cook until it’s firm to the bite, then set aside 1 cup of the pasta’s cooking water before draining.
  3. Place a large pan over medium-high heat.
  4. Lightly coat the chicken pieces with a few teaspoons of olive oil, then sprinkle with salt and pepper.
  5. Cook the chicken in the pan until it turns white and begins to brown, then take it out of the pan and keep it aside.
  6. Melt the butter in the pan, add the garlic and thyme, and let them cook for 30 seconds.
  7. Add the cream and lemon juice, bring the mixture to a simmer, then incorporate the chicken and broccoli, partially cover, and allow it to simmer for 5-7 minutes until both are fully cooked.
  8. Mix in the Parmesan cheese, ensuring it blends into the sauce, and adjust the seasoning with salt and pepper.
  9. Combine the pasta with the sauce, adding some reserved cooking water if the sauce is too thick, ensuring the pasta is well-coated. Serve right away.
