  • – 2 tablespoons (30ml) vegetable oil

  • – 128-ounce can plum tomatoes, hand crushed or blender pulsed
  • – 4 cups (1L) low sodium beef broth
  • – 1 pound (454g) medium shells
  • – 1 cup (240ml) coconut cream
  • – 1/2 cup (45g) grated non-dairy cheese
  • – 1/4 cup (60 ml) basil leaves, hand torn
  • – salt and pepper to taste


Instructions

  1. Warm a spacious pan or Dutch oven over medium-high heat, then pour in the vegetable oil and add the ground beef. Cook the beef until it is nearly done, which should take about 7 minutes. Add salt and pepper for flavor.
  2. Reduce the heat to medium, push the beef to the sides of the pan, and place the diced onions in the center. Add more vegetable oil if necessary. Cook the onions for 4-5 minutes until they soften, then incorporate the sliced garlic and cook for around 2 more minutes until it turns a light golden color. Sprinkle in the crushed hot red pepper flakes and continue cooking for 30 seconds.
  3. Introduce the hand-crushed plum tomatoes and low-sodium beef broth into the pot, and bring the mixture to a boil. Once it reaches a boiling point, lower the heat to let it simmer, and taste it. Adjust the seasoning with salt and pepper as needed. Add the medium shells into the pot. Stir them often to prevent sticking and cook until they are almost tender.
  4. Roughly 3 minutes before the pasta reaches al dente, pour in the coconut cream and mix thoroughly to combine. Keep stirring frequently as the pasta finishes cooking to the desired texture.
  5. Take the pot off the heat and stir in the grated non-dairy cheese. Taste again and adjust the seasoning with salt and pepper if necessary, then incorporate the hand-torn basil leaves.
  6. If the pasta seems dry before serving, add a bit of hot broth to make it more fluid. Serve with additional grated non-dairy cheese. Enjoy your meal!
