Description

Fluffy pancakes that are egg-free, butter-free, and oil-free, yet incredibly delicious and satisfying.


Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • A pinch of salt
  • 1 cup milk (or almond milk or pea milk)
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate chips (semi-sweet or dairy-free)
  • Cooking spray or coconut oil


Instructions

  1. In a mixing bowl, combine 1 cup of all-purpose flour, 1 tablespoon of baking powder, 2 tablespoons of sugar, and a pinch of salt. Whisk together.
  2. Add 1 cup of milk and 1 teaspoon of vanilla extract to the dry ingredients. Whisk until well combined.
  3. Gently fold in 1/4 cup of chocolate chips.
  4. Grease your skillet with non-stick spray or coconut oil and heat it on medium-low for about 10 minutes.
  5. Pour a ladleful of batter into the skillet and watch for bubbles to form on the surface.
  6. When bubbles appear, flip the pancake and cook until the other side is lightly golden brown.

Notes

For optimal results, maintain medium-low heat while cooking and avoid thick batter for fluffy pancakes.
