Fluffy pancakes that are egg-free, butter-free, and oil-free, yet incredibly delicious and satisfying.
Ingredients
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoons sugar
- A pinch of salt
- 1 cup milk (or almond milk or pea milk)
- 1 teaspoon vanilla extract
- 1/4 cup chocolate chips (semi-sweet or dairy-free)
- Cooking spray or coconut oil
Instructions
- In a mixing bowl, combine 1 cup of all-purpose flour, 1 tablespoon of baking powder, 2 tablespoons of sugar, and a pinch of salt. Whisk together.
- Add 1 cup of milk and 1 teaspoon of vanilla extract to the dry ingredients. Whisk until well combined.
- Gently fold in 1/4 cup of chocolate chips.
- Grease your skillet with non-stick spray or coconut oil and heat it on medium-low for about 10 minutes.
- Pour a ladleful of batter into the skillet and watch for bubbles to form on the surface.
- When bubbles appear, flip the pancake and cook until the other side is lightly golden brown.
Notes
For optimal results, maintain medium-low heat while cooking and avoid thick batter for fluffy pancakes.
