Description

Delicious cranberry pistachio truffles combining sweet white chocolate, tart cranberries, and crunchy pistachios, perfect for festive gatherings or as gifts.


Ingredients

  • 8 oz white chocolate, chopped
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup pistachios, chopped
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • Additional pistachios for garnish


Instructions

  1. Heat heavy cream in a saucepan until nearly simmering, then remove from heat.
  2. Add chopped white chocolate to cream and let it sit for a minute, then stir until smooth.
  3. Gently fold in chopped cranberries, chopped pistachios, and vanilla extract.
  4. Refrigerate the mixture for 1-2 hours until firm.
  5. Scoop out small portions and roll them into bite-sized balls.
  6. Roll each truffle in additional chopped pistachios for coating.
  7. Place truffles on a baking sheet and refrigerate until serving.

Notes

Use high-quality white chocolate for best results, and consider adding a pinch of salt or experimenting with other nuts for variations.
