Delicious cranberry pistachio truffles combining sweet white chocolate, tart cranberries, and crunchy pistachios, perfect for festive gatherings or as gifts.
Ingredients
- 8 oz white chocolate, chopped
- 1/2 cup dried cranberries, chopped
- 1/2 cup pistachios, chopped
- 1/4 cup heavy cream
- 1 tsp vanilla extract
- Additional pistachios for garnish
Instructions
- Heat heavy cream in a saucepan until nearly simmering, then remove from heat.
- Add chopped white chocolate to cream and let it sit for a minute, then stir until smooth.
- Gently fold in chopped cranberries, chopped pistachios, and vanilla extract.
- Refrigerate the mixture for 1-2 hours until firm.
- Scoop out small portions and roll them into bite-sized balls.
- Roll each truffle in additional chopped pistachios for coating.
- Place truffles on a baking sheet and refrigerate until serving.
Notes
Use high-quality white chocolate for best results, and consider adding a pinch of salt or experimenting with other nuts for variations.
