A delightful dish combining sweet potatoes, tart cranberries, and crunchy apples, perfect for gatherings and festive occasions.
Ingredients
- 4 medium-sized sweet potatoes
- 1 cup fresh cranberries (or frozen if preferred)
- 2 medium apples (Granny Smith or Honeycrisp)
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter
- A pinch of salt
Instructions
- Preheat the oven to 400°F. Wash and poke holes in each sweet potato. Place them on a baking sheet and bake for 45-60 minutes until tender.
- While the sweet potatoes bake, wash the cranberries and chop the apples. In a saucepan over medium heat, combine cranberries, chopped apples, brown sugar, and cinnamon. Cook until the cranberries burst, and the apples soften, stirring occasionally.
- Once baked, remove the sweet potatoes from the oven and allow them to cool slightly. Cut them open lengthwise and scoop out the flesh into a mixing bowl, leaving a little around the skins.
- Add the cranberry-apple mixture and butter to the sweet potato flesh. Season with a pinch of salt. Mix until creamy and well-combined.
- Spoon the mixture back into the sweet potato skins generously. Return them to the oven and bake for an additional 20 minutes to warm through and allow flavors to meld.
Notes
For even cooking, choose sweet potatoes similar in size. Adjust sweetness by reducing brown sugar or adding a splash of lemon juice if too sweet.
