Description

Delicious and nutritious energy bites made with oatmeal, almonds, and cranberries, perfect for a quick energy boost.


Ingredients

  • 1 cup oatmeal
  • 1/3 cup chopped almonds
  • 1/3 cup sweetened shredded coconut
  • 1 tablespoon ground flaxseed (optional)
  • 1/2 cup nut butter (peanut or almond)
  • 1/4 cup honey
  • 1 tablespoon chia seeds
  • 1/3 cup dried cranberries, roughly chopped


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix oatmeal, chopped almonds, and sweetened shredded coconut in a bowl. Spread evenly on a baking sheet and bake for 8-10 minutes, stirring halfway through.
  3. Allow the mixture to cool.
  4. In a separate medium bowl, microwave the nut butter for 20-30 seconds until runny.
  5. Combine the baked mixture with nut butter, flaxseed, honey, chia seeds, and chopped cranberries. Stir until evenly coated.
  6. Form the mixture into 1.5-inch balls and refrigerate to set.
  7. Store in an airtight container in the refrigerator for up to a week or freeze for up to three months.
