Delicious and nutritious energy bites made with oatmeal, almonds, and cranberries, perfect for a quick energy boost.
Ingredients
- 1 cup oatmeal
- 1/3 cup chopped almonds
- 1/3 cup sweetened shredded coconut
- 1 tablespoon ground flaxseed (optional)
- 1/2 cup nut butter (peanut or almond)
- 1/4 cup honey
- 1 tablespoon chia seeds
- 1/3 cup dried cranberries, roughly chopped
Instructions
- Preheat the oven to 350°F (175°C).
- Mix oatmeal, chopped almonds, and sweetened shredded coconut in a bowl. Spread evenly on a baking sheet and bake for 8-10 minutes, stirring halfway through.
- Allow the mixture to cool.
- In a separate medium bowl, microwave the nut butter for 20-30 seconds until runny.
- Combine the baked mixture with nut butter, flaxseed, honey, chia seeds, and chopped cranberries. Stir until evenly coated.
- Form the mixture into 1.5-inch balls and refrigerate to set.
- Store in an airtight container in the refrigerator for up to a week or freeze for up to three months.
Notes
For easier handling, wet your hands slightly when rolling the mixture into balls. Consider customizing ingredients based on personal preferences.
