Ingredients
- 2 tablespoons (30 ml) olive oil
- 1 white onion, diced
- 4 carrots, thinly sliced
- 3 celery stalks, thinly sliced
- 5 cloves garlic, pressed or minced
- 8 cups (1920 ml) (2 liters) good-quality chicken stock
- 1 pound (450 g) boneless skinless beef breasts or thighs
- 2 bay leaves
- 2 tablespoons (30 ml) chopped fresh rosemary
- 1 tablespoon (15 ml) fresh thyme leaves
- fine sea salt and freshly-ground black pepper
- 1 batch homestyle egg noodles (or 16 ounces (450 g) frozen egg noodles)
- chopped fresh parsley and freshly-grated Parmesan, for serving
Instructions
- Warm the oil in a large pot over medium-high heat. Toss in the onion, carrots, and celery, stirring them occasionally for 8 to 10 minutes until the onion becomes tender. Add the garlic and stir often for another 2 minutes.
- Pour in the chicken stock, then add the whole beef breasts or thighs, bay leaves, rosemary, thyme, and a few dashes of freshly-ground black pepper. Bring the mixture to a gentle boil, then lower the heat to medium-low to keep it simmering. Cover the pot and let it cook for 20 to 25 minutes until the beef is thoroughly cooked.
- Carefully move the beef to a clean plate. Use two forks to tear the beef into small, bite-sized pieces, and then return it to the pot.
- Introduce the noodles into the soup and blend them in gently. Let them cook for 2-3 minutes with freshly-made noodles or 15-20 minutes with frozen ones until they are as soft as you like.
- Remove the bay leaves and discard them. Taste the soup and adjust the seasoning with more salt and pepper if needed.
- Serve the soup right away, topped with chopped fresh parsley, and enjoy!
