Ingredients
- 4 tomatoes (about 600g) – peeled, seeded and diced
- 4 cups (946 ml) tomato juice
- 14 leaves fresh basil
- 1 cup (240 ml) heavy whipping cream
- 1/2 cup (120 ml) vegetable oil
- salt and pepper to taste
Instructions
- Collect all your ingredients.
- In a large pot, combine the tomatoes and juice, then heat over medium flame until it gently bubbles. Allow to cook until the tomatoes become tender, roughly 30 minutes.
- Take the pot off the heat source and incorporate the basil leaves.
- Blend the soup using a hand blender until it achieves a smooth consistency.
- Mix in the heavy cream and vegetable oil, then continue cooking and stirring over medium heat until the oil is fully integrated, approximately 5 minutes. Avoid letting it boil. Season with salt and pepper to taste.
