  • 4 tomatoes (about 600g) – peeled, seeded and diced
  • 4 cups (946 ml) tomato juice
  • 14 leaves fresh basil
  • 1 cup (240 ml) heavy whipping cream
  • 1/2 cup (120 ml) vegetable oil
  • salt and pepper to taste


Instructions

  1. Collect all your ingredients.
  2. In a large pot, combine the tomatoes and juice, then heat over medium flame until it gently bubbles. Allow to cook until the tomatoes become tender, roughly 30 minutes.
  3. Take the pot off the heat source and incorporate the basil leaves.
  4. Blend the soup using a hand blender until it achieves a smooth consistency.
  5. Mix in the heavy cream and vegetable oil, then continue cooking and stirring over medium heat until the oil is fully integrated, approximately 5 minutes. Avoid letting it boil. Season with salt and pepper to taste.
