Description

Juicy steak paired with an irresistible garlic butter sauce, transformed into bite-sized sliders that are perfect for sharing.


Ingredients

  • 1 1/2 pounds boneless steak (ribeye, filet, or sirloin)
  • Neutral oil (as needed)
  • Kosher salt (to taste)
  • Freshly cracked black pepper (to taste)
  • 3 sweet onions (thinly sliced)
  • 9 slider buns
  • 3/4 pound sliced havarti cheese
  • 1 stick unsalted butter (at room temperature)
  • 4 garlic cloves (minced)
  • 1/2 lemon (zested and juiced)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon dried thyme
  • 1 teaspoon red pepper flakes
  • 1 tablespoon chives (minced)
  • 2 tablespoons fresh parsley (minced)
  • Kosher salt and pepper (to taste)


Instructions

  1. Prepare steaks by trimming excess fat and silver skin if needed.
  2. Rub the steaks with oil and season them well on all sides with kosher salt and freshly cracked black pepper. If steaks are thicker, be sure to season more heavily.
  3. Wrap the steaks in plastic wrap and place them in the fridge for a few hours for optimum seasoning penetration.
  4. Make the cowboy butter by mixing the room temperature butter, minced garlic, lemon zest, lemon juice, Dijon mustard, paprika, cayenne, dried thyme, red pepper flakes, chives, and parsley in a bowl. Adjust seasoning with salt and pepper to taste.
  5. Cook the steaks over high heat in a skillet or grill until your desired doneness is reached. Let rest for a few minutes.
  6. Caramelize the onions in the same skillet over medium-low heat until golden brown.
  7. Assemble the sliders: place the sliced steak on a bun, top with havarti cheese, a generous dollop of cowboy butter, and caramelized onions.
  8. Serve warm with your favorite sides.

Notes

Consider toasting slider buns to enhance flavor and prevent sogginess. Let cooked steaks rest for five minutes before slicing for juiciness.
