Juicy steak paired with an irresistible garlic butter sauce, transformed into bite-sized sliders that are perfect for sharing.
Ingredients
- 1 1/2 pounds boneless steak (ribeye, filet, or sirloin)
- Neutral oil (as needed)
- Kosher salt (to taste)
- Freshly cracked black pepper (to taste)
- 3 sweet onions (thinly sliced)
- 9 slider buns
- 3/4 pound sliced havarti cheese
- 1 stick unsalted butter (at room temperature)
- 4 garlic cloves (minced)
- 1/2 lemon (zested and juiced)
- 1 tablespoon Dijon mustard
- 1 teaspoon paprika
- 1/2 teaspoon cayenne
- 1/2 teaspoon dried thyme
- 1 teaspoon red pepper flakes
- 1 tablespoon chives (minced)
- 2 tablespoons fresh parsley (minced)
- Kosher salt and pepper (to taste)
Instructions
- Prepare steaks by trimming excess fat and silver skin if needed.
- Rub the steaks with oil and season them well on all sides with kosher salt and freshly cracked black pepper. If steaks are thicker, be sure to season more heavily.
- Wrap the steaks in plastic wrap and place them in the fridge for a few hours for optimum seasoning penetration.
- Make the cowboy butter by mixing the room temperature butter, minced garlic, lemon zest, lemon juice, Dijon mustard, paprika, cayenne, dried thyme, red pepper flakes, chives, and parsley in a bowl. Adjust seasoning with salt and pepper to taste.
- Cook the steaks over high heat in a skillet or grill until your desired doneness is reached. Let rest for a few minutes.
- Caramelize the onions in the same skillet over medium-low heat until golden brown.
- Assemble the sliders: place the sliced steak on a bun, top with havarti cheese, a generous dollop of cowboy butter, and caramelized onions.
- Serve warm with your favorite sides.
