- 1 Pound (454 g) Lean Ground Beef
- 3/4 Cup (180 ml) Finely Chopped Onion
- 1/3 Cup (80 ml) Seasoned Dry Breadcrumbs
- 1/4 Cup (60 ml) Apple Juice
- 1 Egg, lightly beaten
- 2 Teaspoon (10 ml) s Chili Powder
- 3/4 Teaspoon (4 ml) Salt
- 1 Package Ore-Ida® Steam n’ Mash Cut Russet Potatoes
- 2/3 Cup (160 ml) Canned Evaporated Milk
- 1 Tablespoon (15 ml) Butter
- 1 Tablespoon (15 ml) Chopped Fresh Flat-Leaf Parsley
- 1 Teaspoon (5 ml) Garlic Powder
- 1 Cup (240 ml) Cooked Beef Crumbles
- 1/4 Cup (60 ml) Canned Crispy Fried Onions
- 2/3 Cup (160 ml) Shredded Mexican-style Cheese Blend
Instructions
- Heat your oven to 375°F and prepare a 9×9 baking dish by greasing it with nonstick spray. In a big bowl, mix together the ground beef, chopped onion, breadcrumbs, apple juice, beaten egg, chili powder, and salt until everything is well combined. Press this mixture gently into the base of the prepared baking dish.
- Place the dish in the oven, leaving it uncovered, and bake for 20 to 25 minutes, or until fully cooked. Once done, take it out and drain any extra fat if necessary. Change the oven setting to broil and position the rack 6 to 8 inches from the heating element.
- While the beef is baking, microwave the potatoes following the package directions. In another large bowl, combine the hot potatoes with evaporated milk, butter, parsley, and garlic powder. Mash them together until smooth, using a potato masher or an electric mixer for a finer texture. Mix in the cooked beef crumbles and crispy fried onions. Spread this mixture over the cooked beef layer and top with shredded cheese.
- Broil the casserole for 3 to 5 minutes, or until the cheese is lightly golden. Serve hot, adding extra apple juice on the side if you like.
