Description

A light and creamy mousse that balances the rich flavor of peanut butter with the subtle sweetness of honey, perfect for a guilt-free indulgence.


Ingredients

  • 1 cup full-fat cottage cheese
  • 4 tablespoons sugar-free creamy natural peanut butter
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt (optional)
  • 1–2 tablespoons milk (if needed)


Instructions

  1. Strain 1 cup cottage cheese for 1–2 minutes to remove excess liquid; set aside.
  2. Set up a clean 4-cup food processor or blender with a secure blade.
  3. Add strained cottage cheese, peanut butter, sweetener, vanilla, and salt. Distribute evenly.
  4. Blend 45–60 seconds until smooth and creamy, scraping sides halfway.
  5. Check texture. If too thick, blend in 1–2 tablespoons milk gradually.
  6. Transfer to a bowl, cover, and chill for 15–20 minutes to set.
  7. Portion mousse into 2–4 small bowls or jars (¼–½ cup per serving).
  8. Serve chilled with optional toppings.
