A light and creamy mousse that balances the rich flavor of peanut butter with the subtle sweetness of honey, perfect for a guilt-free indulgence.
Ingredients
- 1 cup full-fat cottage cheese
- 4 tablespoons sugar-free creamy natural peanut butter
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt (optional)
- 1–2 tablespoons milk (if needed)
Instructions
- Strain 1 cup cottage cheese for 1–2 minutes to remove excess liquid; set aside.
- Set up a clean 4-cup food processor or blender with a secure blade.
- Add strained cottage cheese, peanut butter, sweetener, vanilla, and salt. Distribute evenly.
- Blend 45–60 seconds until smooth and creamy, scraping sides halfway.
- Check texture. If too thick, blend in 1–2 tablespoons milk gradually.
- Transfer to a bowl, cover, and chill for 15–20 minutes to set.
- Portion mousse into 2–4 small bowls or jars (¼–½ cup per serving).
- Serve chilled with optional toppings.
Notes
Best served chilled and can be topped with crushed nuts or fresh fruit for added texture.
