Description

A creamy and nutritious cottage cheese pasta sauce that transforms ordinary pasta into a delightful meal.


Ingredients

  • 2 teaspoons Olive Oil (or butter)
  • 1 1/2 cups Cottage Cheese
  • 3/4 cup Skim Milk (or half-and-half)
  • 1/2 cup Parmesan Cheese (grated)
  • 6 Garlic Cloves
  • 1 pinch Black Pepper (to taste)
  • 1 pinch Salt (to taste)
  • 2 tablespoons Cornstarch
  • 4 tablespoons Water
  • 8 ounces Cooked Pasta (spaghetti, fettuccine, or penne)


Instructions

  1. Cook the pasta following the packaging instructions for al dente pasta. Drain and set aside.
  2. Add the cottage cheese, skim milk, and Parmesan to the jug of a high-speed blender or food processor.
  3. Blend on high speed until creamy, thick, and smooth. Set aside.
  4. In a medium saucepan over medium heat, add olive oil and sauté the garlic until fragrant, about 30 seconds to 1 minute.
  5. Pour the blended cottage cheese mixture into the saucepan and bring to a gentle simmer. The sauce may appear thin at first.
  6. Reduce the heat to low.
  7. In a small bowl, whisk the cornstarch with cold water. Then whisk this mixture into the warm sauce and cook until it thickens.
  8. Stir in the cooked pasta and heat until warm, ensuring the pasta is fully coated with the sauce.

Notes

Consider adding fresh herbs like basil or oregano for extra flavor. Adjust liquid for desired thickness.
