Description

A creamy and comforting blend of cottage cheese and earthy mushrooms, perfect for any occasion.


Ingredients

  • 2 tablespoons butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups mixed mushrooms, sliced
  • 4 cups vegetable broth
  • 1 cup cottage cheese
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Melt the butter in a large pot over medium heat. Add chopped onion and minced garlic and cook until fragrant, about 3-5 minutes.
  2. Add the sliced mushrooms and sauté until they release moisture and begin to brown, about 10 minutes.
  3. Pour in the vegetable broth and add thyme. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Use an immersion blender to partially or fully blend the soup to your preferred texture.
  5. Stir in the cottage cheese until smooth and well incorporated.
  6. Adjust salt and pepper to taste and garnish with freshly chopped parsley before serving.
