Ingredients
- 1 cup cottage cheese
- 1 cup canned chickpeas, drained and rinsed
- 1 medium cucumber, diced
- 1 medium tomato, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cumin
- Salt and black pepper to taste
Instructions
- In a mixing bowl, combine the cottage cheese and chickpeas.
- Add the diced cucumber and tomato.
- Stir in the chopped red onion and cilantro.
- Drizzle with olive oil and lemon juice; sprinkle cumin over the top.
- Season with salt and black pepper; mix gently until well combined.
- Taste and adjust seasoning if necessary.
- Serve immediately or refrigerate for up to an hour for enhanced flavors.
