Description
A delicious and healthy banana bread made without flour, featuring cottage cheese for moisture and protein.
Ingredients
- 1 cup cottage cheese, blended smooth
- 2 ripe bananas, large
- 2 large eggs
- 2 tbsp maple syrup or honey
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 0.25 tsp salt
- 0.25 cup optional chopped walnuts, chocolate chips, or oats
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- Blend cottage cheese, bananas, eggs, maple syrup, and vanilla until completely smooth in a food processor or blender.
- Add baking soda, cinnamon, and salt to the wet mixture and stir gently until just combined. Do not over-mix.
- Fold in optional mix-ins like nuts, chocolate chips, or oats if using.
- Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
- Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use fully ripe bananas for maximum sweetness. Experiment with mix-ins like walnuts or chocolate chips.
