Description

A delicious and healthy banana bread made without flour, featuring cottage cheese for moisture and protein.


Ingredients

  • 1 cup cottage cheese, blended smooth
  • 2 ripe bananas, large
  • 2 large eggs
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.25 tsp salt
  • 0.25 cup optional chopped walnuts, chocolate chips, or oats


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Blend cottage cheese, bananas, eggs, maple syrup, and vanilla until completely smooth in a food processor or blender.
  3. Add baking soda, cinnamon, and salt to the wet mixture and stir gently until just combined. Do not over-mix.
  4. Fold in optional mix-ins like nuts, chocolate chips, or oats if using.
  5. Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
  6. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes
